Unlike Kombucha, water kefir doesn't require tea.

Unless I am using coconut

I've had great success making a fizzy drink in a sealed bottle by
doing a second ferment with a 1:4 ratio of fruit juice to
water kefir, but I would warn your readers to be very cautious using this method.
If growing your grains so that you can give them away (or even eat them as some people
do), your best bet is to find a fresh source of
water kefir grains.
I also
do not always have juice ready for the
water kefir and so I find my two - stage
water kefir process best in my kitchen.
Once they
do, you will set to make your own
water kefir at home.
Do not order the
water kefir grains when you are going to be out of town and unable to attend to them.

I am not
doing dairy for this reason and thus thought
water kefir would be good, yet I am concerned about all the sugar.

I also usually make any needed household supplies during this time or

The normal advice to «make sure to keep counters and floors clean and put food away so insects aren't attracted to your house,» doesn't works so well when you are fermenting jars of sweetened tea (kombucha) and sugar

i used to take enzymes capsuals before food due to my intestinal problems and my naturapath advised me that i wont need to take them any longer because i drink

I don't often make
water - based
kefir, but I have a similar dilema when brining.
But if the whey (the «
water» at the bottom) is bitter or extra sour, then you may not be able to save it (by the way, this can sometimes be strained and used to make soft or even hard
kefir cheese (so don't toss it just because it looks unappetizing.)
You can
do a variety of different cultured products like
water kefir, beet kvass, fruit kvass (like this one), sauerkraut, etc!
Regarding probiotics though, I was told by a vegan doc in order to really be affective you need 100 billion a day, you can get probiotics capsules that high, but then I decided to just
do a cup of
water kefir daily, stools are now great!

do enjoy drinking bubbly beverages from time to time and with using the
water kefir grains to make this you are getting some probiotics as well.
When my spouse drinks fizzy probiotic drinks like
water kefir soda and fruit - flavored kombucha, he doesn't even think twice about craving a diet soda, and it is immediate.
