There are two varieties of kefir grains:
water kefir which has a yellowish crystal color, and milk kefir which has a white creamy cauliflower - type appearance that of the size of wheat kernels.
We had a batch of
water kefir which you can use to make lemonade and other very healthy naturally carbonated drinks.
Another option is
water kefir which also takes some time to prepare.
I experimented with
the water kefir which were abundant and put milk over a few of them.
Not exact matches
Loads of people have success with this, but typically you'll find dairy
kefir grains (
which have some lactose in them and are best avoided if you are lactose intolerant) and
water kefir grains,
which can work in a sugary
water drink, coconut
water, or other
water - based beverages and makes a light champagne - like drink.
Just so we're clear - this is dairy
kefir, not
water,
which is not allowed on the GAPS intro diet.
Alternatively, you can make
water kefir,
which is made just using
water and sugar thus avoiding any possible contact with dairy.
Homemade
water kefir soda costs about a penny an ounce to make,
which means it is 70 % cheaper than store - bought soda.
Unless I am using coconut
water,
which seems to have no ill effects, I prefer to do two ferments because I like to keep my
kefir grains pure.
Kombucha,
which many of you are likely familiar with, differs from
water kefir because kombucha is specifically cultured in a tea and sugar medium, and
water kefir can be cultured using just
water and sugar.
Kevita is a beverage on the market
which seems to be the closest thing to
water kefir.
One of my favorite prebiotic - probiotic combos is coconut
water kefir (grab the recipe below),
which is both a delicious carbonated beverage and a tonic to balance your gut ecosystem.
Just as with
water kefir, using fruit juice can make kombucha carbonated and slightly sweeter,
which is often more appealing to kids.
You can also incorporate fermented drinks like
water kefir and Kombucha
which are inexpensive to make and can be carbonated like soda!
The «milk» remains,
which we can culture using milk
kefir grains or
water kefir.
What about coconut
water kefir (
which I also consume)?
What is interesting is that we control the diarrhea by taking out the newly introduce, daily
kefir water and spinach,
which is suggestive of Histamine Intolerance.
While these carbonated sodas are exceedingly easy to make, they require
water kefir grains (also called sugar
kefir grains),
which are gelatinous communities of yeast and bacteria.
Keep repeating the 4 day process until you have enough grains to make a batch of
water kefir to drink —
which uses a different recipe.
I haven't tried dairy
kefir grains, but I have been brewing
water kefir and making
kefir «soda»,
which is a probiotic the kids will actually drink.
Since your workshop my daughter is regular (with her BM's)!!!!! I have made Beet Kavas and
Water Kefir drinks
which she drinks twice a day.
Some specialty stores are even starting to sell another fermented drink,
water kefir,
which is extremely easy and cheap to make at home and has a quick turn over time.
Hi - When I first began taking
water kefir I had what the doctor diagnosed as athletes foot (
which is a fungal infection that I have previously been prone to) and I also got little white pulsile itchy spots on my hands (
which I have also had at times in the past) I stopped taking the
water kefir for a while and then began again with a smaller dose.
I was wondering about the photos of the
Kefir which shows that it has what looks like
water in bottom of jar and cream on top.

kefir made from fermented coconut
water, and goat milk

You can make healthy

First of all, the recommended serving size is 4 grams,
which is less than you would need in a normal
water kefir cup.
Besides a superior probiotic boost, milk
kefir also contains calcium and magnesium in high amounts
which are absent in
water kefir.
If you suffer from candida issues or diabetes, note that unless you are extremely careful to ferment the
water kefir properly, there can be too much sugar remaining
which could actually harm you rather than help.
Which is really better,
water kefir or milk
kefir?
Milk
kefir grains and
water kefir grains are not interchangeable
which is why I always recommend obtaining them from reputable sources I list in my healthy shopping guide.
I am currently on milk
kefir and need to try
water kefir because milk products do have inflammatory properties
which affect me.
(In fact,
water kefir grains look like diced kombucha scobys,) The bacteria are mostly lactobacillis,
which consume the milk sugars and create lactic acid.

Because of the many strains of bacteria in
Kefir, living in symbiosis, it doesn't matter
which medium is used to grow it in: raw or processed milk, soya milk, coconut juice or even in sugar
water.
Water kefir is non-dairy,
which makes it perfect for vegans.
Or you could try what one site suggests,
which is rinsing them off, putting them in fresh
water for 24 hours, making a batch of
kefir but chucking it, and then resuming where you left off.
2) Apparently I am not the best
water kefir grain mama and I brew a little on the long side (twice now),
which can negatively affect the grains.
And probiotic kombucha,
which is a fermented tea drink in
which tea,
water and sugar are combined together and heated, with starter cultures added to create the end product, exactly as is done with yogurt or
