I opened up all my cupboards, thought about what kind
of nutrition I wanted to get
out of my snack (fiber, vitamins, minerals, protein, carbs, heathy fats), chopped a dark
chocolate bar in half, turned on my hob, added some
water to a small pot, took
out a bowl and threw in a bunch
of seemingly random ingredients, rolled that dough into truffles, dipped them in what was by then melted
chocolate, stuck the truffles in the freezer for 8 minutes and BAM!!!!!!!!!!!!! They were ready!
Like
chocolate, tomatoes tend to dominate a dish and blow all other ingredients
out of the
water, excuse the pun.
Just made this, with a few tweaks (I omitted the oil and
water sauteed the onion and red peppers; I used Wondercocoa powder 3 TBS instead
of chocolate, used no salt added beans, and (because I ran
out of quinoa) used brown rice.
Melt
chocolate in a double boiler (for me this was a glass bowl on top
of a sauce pan with simmering
water) and submerge each truffle in the
chocolate, using a spoon to scoop
out each truffle and tapping the spoon side
of the dish to get off any excess
chocolate.
Also, the move let me eliminate cream from the ingredient list and use one
of my favorite tricks — I learned it both from trying to make things dairy free and also from not wanting to go
out to buy cream — which is making a
chocolate ganache using
water.
1/4 cup unflavoured whey protein 1/4 cup ground almonds (plus a bit extra, if you need to dry
out the mix later) 1tbsp high protein nuts n more white
chocolate peanut butter 1tbsp coconut flour 1 - 2caps valencian orange oil (mine came from Asda) 1 - 2tbsp
water (add a little at a time so that the mix doesn't get too wet & sticky) 7 drops vanilla flavdrops zest
of half an orange 50g white
chocolate 6 flaked almonds
Substituted Honeyville Almond Meal (have used Trader Joe's in the past successfully too), a simple syrup because I was
out of honey (Cook equal parts
water to organic cane sugar, added vanilla for flavor, then cool to use in this recipe), added additional 1/2 tsp baking powder just for fun, Decaf instant coffee, and Enjoy Life
chocolate chunks.
Indgredients 2 ripe bananas 8 soft medjool dates 1 egg / or 1 tbsp chia or flax seed in 3 tbsp
water 1 cup rolled oats / spelt / barley (100 g) 3/4 cup toasted coconut flakes (45 g) 1/2 cup almonds / hazelnuts, chopped (75 g) 1/2 cup chopped pistachio (50 g) hold back 1/3
of it to top with 1/2 cup cranberries (50 g) 2 tbsp sesame seeds / poppy seeds Zest from 1 organic lemon 1 vanilla bean, scraped 1/4 - 1/2 tsp cardamom 1/2 cup white
chocolate (50 g) if vegan use a vegan
chocolate or leave
out 1 tsp coconut oil A generous pinch
of flaky sea salt
I haven't seen that Trader Joes
chocolate bar but I have a feeling these blow it
out of the
water.

chocolate out of the

chocolate) and being back at work this year means LOTS more walking around (which for now is my little bit
of exercise.
The physics
of the
water bell is exactly the same as the falling curtain
of chocolate; and the reason the
chocolate falls inwards turns
out to be primarily surface tension.

water for the next day, write in my journal, make my golden milk, snuggle into my sleeping bag, put a handful (or 2 or 3)
