Once the water runs clear squeeze the excess
water out of the sweet potato and place it in a large mixing bowl.

sweet potatoes were a bit old / dry so I added about half a cup
of water and came
out with much shorter brownies than yours but it was still delicious.
I use the trivet that came with my Instant Pot to keep the
sweet potatoes out of the
water.
All I did for the crust was shred 3/4
of a huge
sweet potato in the food processor, squeeze the
water out and mix it with 2 tbsp
of lard.
Tip to reduce the potassium content
of the
sweet potato: You could also cut the
sweet potato into small pieces and soak them in
water before boiling to allow the potassium to leach
out in the
water.
