You use considerably less liquid,
cooking time is much faster, vitamins and minerals aren't leached away in the
cooking and there's the added benefit of killing microorganisms in the very high
water temperature.

Oil can be heated to a much higher
temperature than
water, helping us
cook foods and give them a delicious golden crust.
The lower the
temperature at which
water boils, the faster foods start to dry out and the more difficult it can be to
cook.
Boiling not only leaches goitrogens into the

But, how does using a pressure
cooker affect nutrients since the
water is artificially kept in liquid state at a higher
temperature during
cooking?
As the

cook is so much higher than the boiling point of
