For a
vegan version I use 1/4 cup
water for each egg, heat the
water and dissolve vegetable broth cubes (2) in the
water to replace the seasoning from the
soup mix, replace the cheese with tofu.

I used coconut milk and some
water (or vegetable broth) to thin out the potatoes more, and the result was
vegan soup heaven.
I kept the
soup vegetarian and
vegan but if you want you can use chicken broth instead of
water.
To make it
vegan, you can soak a 1/4 c of raw cashews in
water for 4 hours (I do it overnight), and then blend with a cup of fresh
water and add that instead of both cream and milk (it is a bit more cream, but cashews can thicken up a
soup pretty quickly and easily).
Made from mangoes,
water or vegetable broth, lime, ginger and chipotle powder, this
soup is vegetarian,
vegan and gluten - free, and it's very close to being a raw
vegan recipe, too.
Soak cashews in
water overnight and then blend to incorporate into smoothies and
soups as a
vegan replacement for cream.
