"Watermelon radish" refers to a type of radish that has bright pink or red flesh, resembling the colors of a watermelon. It gets its name because it looks like a miniature version of a watermelon when sliced, but it tastes like a radish.

I like to marinate the
sliced watermelon radishes in lime juice to make them less bitter (and because I love lime and lemon juice on everything!)
I also like to roll thin slices
of watermelon radish around marinated veggies for an all - veggie play on a taco.

The inspiration for this salad came from some beautiful
organic watermelon radishes that popped up in my SPUD delivery box the other week.
