I enjoyed every bite of my long holiday weekend but I am so ready to feed my body better and move it more this week, that's for sure.
It's fiddlehead fern season and although these little bundles of crunchy green goodness are a bit more tedious to prepare than other seasonal veggies, they're well worth the effort for the few weeks they're available.
As much as I love creating in the kitchen, constantly feeling like I had to come up with something new every week — not just something new, but something good — was a bit stressful with everything else I had going on at the time.
Fast forward a couple of weeks and my local chain on GMO food store is advertising Vega One a good bit.
So... I've been feeling a bit guilty about the accolades I gave to last weeks VGFH muffins... I'm not sure they are very good, maybe more like good - for - healthy, I need to tinker with the recipe and feel like I may have misled you.

But when your cooking bulb goes on, this bits and ends can be transformed on a blink of an eye and will turn into, perhaps the best dinner of the week.
But then the other week I went to the local supermercado to try and find a good local flour tortilla and instead I found these small, thick, all corn tortillas with a little bit of lime water, they are now my new favorite!
I made this recipe last week (got it from One Green Planet) and although it was has a good kick to it, I have to add just a bit of Bragg to my serving for it to be perfect!
It's another one adapted from a Rachael Ray cookbook — I was on a bit of a roll with her cookbook last week, because I felt so bad about the Rachael Roy / Ray Becky with the good hair fiasco.
