I've baked more loaves
in my life and tried both oven and a fancy high end
bread machine (so far the oven works
best since so much pre-mixing is required).

As a personal comment, this recipe works
well for me and is the first «big win» I've had making healthy

Wanted to post that a technique that GF Goddess recommends worked
well for me — when using a
bread machine — immediately remove
bread from pan and place
in a 350 degree oven for about 10 minutes and it helps an overly moist loaf to dry out and not sink so badly.
To make things even easier, I put the milk, butter (or Smart Balance), and saffron threads
in a Pyrex cup measure
in the microwave to warm for just 15 seconds before putting
in the
bread machine; which gives the yeast a
good start, too.
