Just wanted to add that I made these
in a * mini *
muffin pan and at 13 minutes they came out soft on the outside, no crust effect (
good for teeny kids), and at 16 minutes they started to have a little crunchiness on the outside (nice for adults if eating hot).

in a mini
muffin pan before and it worked
well.
In the lined
muffin tin, I gave the shiny batter a couple of
good luck taps, gingerly slid the
pan into the oven, and set the clock for a time of twenty.
In order to get my baked
good fix, I've been searching high and low for jumbo
muffin pans so that I can make my own bakery - sized baked goods at home.
If you're making
muffins, fill each
well about 3/4 full; the recipe makes about 15, so you'll need to bake
in two batches (unless you have two
muffin pans).
Spray your
muffin pans and put the mashed potato mixture
in building up around the sides but leaving a
well in the middle.
