I have a general question (although it does relate to these too),
what alternative would you suggest instead of nuts, nut butter and nut
flour (where they are obviously not a key ingredient to a recipe like macarons)?
I'm wondering
what you could suggest as an
alternative to almond
flour?
BUT (and a big BUT here) it CAN be a rewarding nut free + grain free
alternative to baking with coconut
flour all the time — which is
what you'll probably find yourself doing if you need to avoid nuts.
I know that many of you are pulling out your old favorite recipes and wondering
what to do with them (I've had many questions lately about rules of thumb for
flour substitutions, and
alternatives for those with nut or egg allergies).
What do you think would work well as an

I haven't done any cooking with
alternative flours, but from
what I've read, I think you should be able to substitute coconut
flour in something closer to a 1/3 or 1/4 ratio in other recipes.
The only thing I have to say — aside from how delicious these look — is to be aware that GF
flours, and the majority of GF products, use
flours / starches that are actually higher in glycemic index than the wheat
flour / wheat derivatives... If you are diabetic, you really have to be even more acutely aware of
what the GI of these
alternative flours / starches are....
What would you recommend as the best
alternative flour to use in its place?
I am really enjoying experimenting with
alternative flours, and Kim's approach to desserts she cooks at home is just
what I needed.
