I used vegetarian
beans to keep this
dish vegetarian, but use
whatever you like.
I take
whatever veggies happen to be in season and in my fridge, throw in some curry paste or curry powder, something to give the
dish some body like chickpeas or
beans or sometimes potatoes / sweet potatoes or tofu.
We always have a second side
dish,
whatever is on hand, with my favorite being sweet potato cut into fry shapes and baking, roasted cherry tomatoes, pinto
beans with lots of chili powder...
You could throw in
whatever kinds of vegetables or
beans you fancy to make this
dish your own as well, think of this sauce as a starting point!
If buying canned butter
beans, you don't need to do anything - these are already cooked and are good to be used in
whatever dish you're making as soon as you open them!
