My non-GAPS family thought these tasted just like
a wheat flour cookie.
The result is a moist and chewy oatmeal cookie... more like a breakfast cookie than a traditional
wheat flour cookie.
I prefer
wheat flour cookies and have a few types on hand (all purpose, whole wheat pastry, etc...)
I have brought them to 2 events and they were gobbled up even before traditional
wheat flour cookies.

To make sure your
cookies turn out extremely soft and chewy, you must measure both the whole
wheat flour and old - fashioned oats correctly.
You can substitute this
flour for half the all - purpose
flour in many recipes or completely replace
wheat flour in cakes and
cookie recipes.

These are simply a vegan gingerbread
cookie, not a low fat or particularly healthy alternative (besides the inclusion of whole
wheat flour) so they taste very close to your regular gingerbread
cookies!

cookies have a nuttier taste, thanks to the whole
wheat flour, which I think suits them perfectly.

cookies taste like little cocoa cakes, but are made with clean ingredients like whole
wheat flour, oats, cocoa, olive oil, honey and almond butter, and packed with cranberries and pistachios.
To make these healthy
cookies, you'll start with white whole
wheat flour.
Ikezi's original recipe calls for a mix of all - purpose and whole -
wheat flour, which together do result in a
cookie with a profoundly graham flavor.

It's easy to catch the big things like bread,
cookies, and pasta that are made from
wheat flour while missing other less obvious sources of gluten.
It is his recipe that I am using in this post, I think next time I make them I will use half whole

wheat PASTRY
flour instead of all - purpose whole
wheat and the consistency of the dough was so much better, just like ordinary
cookie dough!
I think whole
wheat flour would definitely have an impact on the outcome of the
cookies... it will probably make them more dry and less tender.
They have far less sugar and fat than traditional
cookies (the carrot supplies some of the moisture) and are made with both whole
wheat flour and rolled oats, which counts for something.
These ginger
cookies are also full of whole
wheat flour, apple sauce, ground flaxseeds and lemon juice.
But, be prepared for your whole
wheat cookies and cakes to be a bit denser, heavier and darker than ones made with white
flour.
Perhaps because of all of the other ingredients, the
wheat flour isn't as assertive tasting as it is in some recipes, and they maintain the identity of a
cookie which happens to have healthy ingredients, rather than tasting like health food.
Further, the
flour can be used as a singular replacement for
wheat flour in
cookies and cakes.
Toasty millet gives a fantastic crunch to the
cookies, as well as a pleasingly nutty flavor that works in harmony with the flavor of the actual nuts and
wheat flour.

cookies gluten free by replacing the
wheat flour with stabilized white rice
flour (basically cup for cup) and used dark chocolate chips.
So, if you decide to make this recipe (although I recommend you don't even bother), keep in mind that you should only put in 2 1/2 cups of whole
wheat flour, instead of 3 or else it makes the
cookies extremely dry.
