I substituted the vital
wheat gluten with garbanzo bean flour
as suggested by a reader.
The recipe looked somewhat intimidating (
as do most of the vital
wheat gluten meat recipes!)
I would use vital
wheat gluten instead of the flour and knead it gently until it firmed up, adding more
gluten as necessary.
