If none of those work for you, you can make your own vital
wheat gluten by washing regular flour until the starches dissolve and you're left with just the gluten.
I would like to replace
wheat gluten by carob gum, guar gum or xanthan gum... Would that be possible?

Although a

by some people as a
gluten alternative due to its simple chromosome structure.
Many researchers feel that consuming such a high concentration (there's usually only a small amount of
gluten in a
wheat - based food) could lead to widespread inflammation
by oversaturating the body with
gluten.
Although those ingredients can be very nutritious for most people,
wheat, barley, rye, and sometimes oats must be avoided
by those sensitive to
gluten.

I bet this would be easy to make
gluten free
by substituting buckwheat flour for the whole
wheat and perhaps a tsp of xantham gum or a tbs or 2 of ground flax to increase protein content.

gluten - free brownie mix and almond flour instead of
wheat flour so I can't speak to the brownie part of the recipe, but the cream cheese flavored with bourbon really elevated these brownies and made them perfect for a holiday event.
