gluten as a bulking agent, and
powdered milk also contains
wheat.
If you want to make your own, look for
powdered gluten - sometimes called vital
wheat gluten or
gluten flour — it's important to get the right product.
I added (quite a lot of) whey protein
powder, and used oats (blended in a food processor) and rice flour so they just so happen to be
gluten - free (which was a happy coincidence, as my
wheat - free Aunt was visiting when I made them).

In a food processor, place cooked lentil / mushroom mixture, onion / tomato mixture, vital
wheat gluten, 3 tablespoons BBQ sauce, water, Worcestershire sauce, onion

So I usually double the baking
powder the
wheat based recipe calls for when cooking
gluten free.
Baking
powder would give it more «lift», but without the internal structure of something to hold it all together (usually it's the
gluten in
wheat flour that supports a lot of the structure)... it would just deflate, creating essentially the same thing.
In recipes containing
wheat (also rye or barley) the protein (
gluten) in the flour serves the same purpose that guar gum, psyllium husk
powder, and xanthan gum do in
gluten - free baking.
Good Greens Nutrition Bars and Greek Yogurt Bars are labeled
gluten - free and contain the ingredient «
wheat sprout
powder» or «
wheat sprout» in the ingredients list according to information on the manufacturer website and product labels.
This can be tricky since most protein
powders available have incredibly long lists of ingredients and sometimes even use code names for
