We use these

There's no reason
for persons with celiac disease or
wheat allergies to miss out on classic breakfast items like
pancakes.
So, GF 1:1 baking flour (blue packaging if using Bob's Red Mill) usually already includes xanthan gum and is typically used in
pancakes, breads, and muffins and is supposed to be able to be substituted equally
for wheat flour.
We already mostly use whole
wheat flour
for health reasons when making waffles,
pancakes, and baked goods, but you could make this same substitution if you were using white flour.
You will get a better rise with
wheat flour and using the right size pan, but it's normal
for the
pancake to sink down in the middle once you remove it from the oven.
