Although I love flour tortillas, enriched wheat is hard for the body to digest, I now use ezekiel's sprouted
wheat tortillas which are pretty good.

which some gluten - oriented websites still say might be problematic, although most don't).
If you have never used cornmeal or cornflour before I suggest you make the
Tortillas with
wheat flour first, as there is no gluten in cornflour
which makes it difficult to handle and roll out into thin circles..
The only reference I can find in the book to sprouting grains is a couple recipes that include
tortillas which can be made from sprouted
wheat.
Check the ingredient list to make sure the
tortillas don't include enriched flour — it needs to say whole
wheat flour,
which has greater nutrition than refined flour.
