While similar to other
nut flours in texture and flavor, chestnut
flour works better in this recipe thanks to its lower fat content and higher starch content, creating a fluffy waffle instead of a gummy, dense one.

Inspiration for using
nut butter instead of
flour came from a recent post by Sarah B on the amazing My New Roots blog, although it appears the idea itself has been around the internet for a
while.
I have been trying to make
nut flour for a
while but it is not as fine.
While some rely on protein powder as the main ingredient, others get the bulk of their nutritional value from natural add - ins such as
nut flours or butters, beans or other seeds and grains.
While he agrees that veggies should comprise the bulk of your diet, along with
nuts, seeds, and beans (only as a side dish), and that you should avoid refined vegetable oils, sugar, dairy and all
flours, he also supports eating whole eggs, and grass - fed meat and butter.
Together, these to
flours mimic the taste and texture of ground
nut and seeds quite well,
while still providing a rather great nutritional benefit.
