The cupcakes themselves are not overly sweet since the only sugar in them is fruit sugar, that's why I love a not - small serving of coconut
whipped cream frosting on top.

I admit that my favorite way to eat this caramel flavored spread is from a spoon, but it is also great when poured over ice
cream, used as a dip for fruit, spread
on bread or even pancakes, poured over popcorn, used as a flavoring in homemade ice
cream or yogurt, as a
frosting, to sandwich two cookies together (especially in Alfajores), as a layer in Millionaire's Shortbread Bars, or in a Banoffee Pie (takes a pastry shell and fills it with Dulce de Leche, sliced bananas, and
whipped cream).
A pumpkin spice latte isn't complete without that fluffy
whipped cream on top — but rather than
whipped cream, I am topping these with a creamy, soft
frosting.
If you're planning to double the recipe but only need enough
frosting to do a rose swirl
on each cupcake, instead of doubling the
frosting recipe you could change the
frosting to be use 1 and 1/4 cup butter (2 and 1/2 sticks), 4 - 5 cups powdered sugar, and 3 - 4 tablespoons of
whipping cream.
I was so excited to try their sprinkles out and instantly envisioned them
on top of a chocolate zucchini cake with a
whipped chocolate coconut
cream frosting.
Will try this out
on my mom who loves coconut cake, with the fluffy
frosting, lemon filling or the coconut cake that sits for days to blend the sour
cream / cool
whip into deliciousness.

Made the
frosting, too... I made a similar combo of mascarpone cheese and
whipping cream for to top a keto cheesecake I make, but ever since I saw a
frosting being made
on TV with egg whites, sugar and butter I've been wanting to try making something similar subbing in Swerve — I am wondering how something like that would taste
on these?
And while we are
on the topic of fruits, try this Strawberry Cake With Strawberry
Whipped Cream Frosting.
A cupcake of course isn't a cupcake without some
frosting so I topped them with a vanilla
whipped cream -
cream cheese
frosting and a sliced fresh strawberry
on top.
But it's also a real treat: it's made with chocolate and vanilla ice
cream layers, with crunchy chocolate bits and
whipped frosting on top.
And you need a peanut butter
frosting that's firm enough to hold up to layering more cake
on top of it, so no
cream cheese or
whipped cream frosting here.
I haven't used the coconut
whipped cream as a
frosting, so I'm not sure how it would hold up
on a cake.
Make sure to use my Coconut Milk
Whipped Cream Frosting and add some sprinkled coconut
on top.
The texture is also kind of different once
on the cake and refrigerated — then it's more like a
whipped cream cheese
frosting.
To make the
cream cheese
frosting,
whip cream cheese
on high speed util creamy and no lumps remain, about 3 minutes.
The cinnamon
cream cheese
frosting mirrors the
whipped cream on top of the popular Starbucks pumpkin spice latte.

whipped cream on top of the Starbucks pumpkin spice latte.
Fantastic — as good as I've had in a restaurant.When we made it, for the
whipped cream we used the leftover
whipped cream /
frosting from the Chocolate Irish Whiskey Cake
on the adjoining page.
Beat
on high speed until
frosting is a
whipped cream consistency.
As it was a special treat I topped it with a
frosting of mascarpone,
whipping cream, orange juice, and confectioners sugar (not healthy but it was oh so good
on the cake).
I have an edible image I need to put
on the cake and i don't think
whipped cream frosting will work for that.
Finally, beat in the
whipping cream (if needed) and beat the
frosting on medium - high speed for an additional 30 seconds.
We used
whipped cream as the
frosting between each layer and
on top.
Leftover
whipped cream can be used in coffee, to
frost a cake,
on top of pancakes or waffles, or spread
on top of scones.
These Paleo Valentine's Day cookies would also be delicious with coconut
whipped cream instead of
frosting, but I personally love this glazed
frosting on cookies.
