I loved the 60 % cacao dark chocolate chips in these, but feel free to use semi-sweet chocolate chips or even
white chocolate chips if you prefer!
You could even add in
some white chocolate chips if you really want to outdo yourself!
Or another idea would be to add 1/2 cup (80 grams) of dark or
white chocolate chips if you want even more chocolate flavor.
Replace butterscotch with dark /
white chocolate chips if you have any!

If drizzling with
white chocolate, melt the
white chocolate chips and oil or Crisco in a small bowl on half power in 30 second increments, stirring between each, until melted and smooth.
If you have no Butterscotch
chips / morsels on hand, substitute it with dark

If making gluten free, be careful to read the package because some vegan brands have barely in them.
Note:
If you don't have candy eyeballs, you can easily make eyes for the birds by melting some
white chocolate chips and dotting them on the chick faces.
If you don't have this particular product, just substitute a tablespoon of
white chocolate chips, a tablespoon of cashew butter (I buy fresh ground at from my grocery store), and a teaspoon of coconut butter (or coconut oil that's solid at room temp).
The butter extract and
white chocolate chips the recipe calls for are optional, but
if you're not going to frost your cookie bars then I would discourage leaving out the
white chocolate chips — unless you want a very boring protein cookie bar!
