If you can't track down whole wheat pastry flour, substitute unbleached all - purpose flour, or I suspect
white whole wheat flour work just fine as well.

white whole wheat flour all the time now that it's finally available here, and it
works very nicely in heavier baked goods like cookies.
See if you have more luck if you use only half
whole -
wheat flour first, and if that doesn't
work, try a fuller fat milk, and then a higher proportion of
white flour.

white whole wheat flour, all - purpose
flour should
work.
And although I opted for a heartier base of spelt
flour, unbleached or
white whole wheat flour will
work just the same.
Don't worry if you don't have spelt
flour handy, as
whole wheat flour (preferably
white whole wheat) will
work just fine, too.
Oat
flour tends to be a little finicky so that's risky but I think
white whole wheat would
work.

I'm
working on changing myself over on this however I try VERY hard to buy only
whole wheat things, and more so multi grains I have bought bulgur and
wheat germ and when I bake I use oatmeal, bulgur,
wheat germ or flax instead of the
white flour and with
whole wheat flour.
I also subbed half
whole wheat flour for the
white flour in both parts and it
worked great!
This
worked very well with all
white whole wheat flour.
