This is a favorite dish of mine and if I ever see mussels with
a white wine sauce on a menu, I order it.

To make the tartar
sauce, finely mince 1 clove of garlic and add it to a mortar, then add 1 tablespoon of capers and using a pestle mash down
on the garlic and capers until you form a paste, next add 1/2 cup of Greek yogurt, 1/2 tablespoon of dijon mustard, 1/2 teaspoon of
white wine vinegar, season with sea salt and freshly cracked black pepper, and mix everything until it's well mixed, then cover the mortar with seran wrap and add it to the fridge
If needed, bring the
white wine in the chicken to a boil
on the stove top for 3 - 4 minutes to thicken the
sauce.
If you seem to be running low
on sauce, stretch it with about 1/2 cup unsalted chicken stock or
wine (red for red
sauce,
white for béchamel).

This dish of baked fish & vegetables is little high
on liquid thanks to the
white wine and olive oil which finally makes a great
sauce to spoon it over the baked fish or some toasted bread.

I didn't have smoked tofu but had a package of firm tofu
on hand so just marinated it for a few hours before hand in liquid smoke, soy
sauce,
white wine vinegar and tiny bit of maple syrup and then threw it
on a frying pan when I was ready to make the salad.
The other thing I did was while the pork was resting
on the cutting board, I removed the large herb sprigs, squeezed some of the roast garlic cloves into the pan, deglazed the pan with some
