There's plenty of fiber in
apple peels, celery stalks,
whole - grains like oats and flax... but these foods don't always fit
I made a bunch of tweaks — halved the recipe, white
whole wheat flour, 2 % greek yogurt, didn't
peel the
apples, cut both sugars by 1/6, a dash of nutmeg.
All of that fruit adds up to a
whole lot of orange
peels,
apple cores and watermelon rinds.
Peeling the
apple makes it lose about half of its fiber, and applesauce is also much lower in fiber than a
whole apple and has more sugar and calories.
Instead of giving their kids an unpeeled
whole apple or a cut up
whole apple, parents often give kids
peeled apples, applesauce or
apple juice as alternatives.

To get the maximum nutritional benefit from
whole apples, it is better to prepare them WITHOUT
peeling them when appropriate (approximately 2/3 of the fibre and anti-oxidants are contained within the
peel).
