Try
Buckwheat Groats in any recipe that calls for
whole grains: pilafs, salads, casseroles, soups, granolas, stews, or as a cereal on its own.
Instead of flax meal, substitute a
whole grain flour such as spelt, kamut,
buckwheat (GF) or even almond meal.
The
buckwheat and almond are both naturally high in protein so they work well here, the almond giving it a slightly softer texture than if you were to use another

I'm really glad I found the light
buckwheat flour but the darker
whole grain
buckwheat flour made delicious waffles too.
I bet this would be easy to make gluten free by substituting
buckwheat flour for the
whole wheat and perhaps a tsp of xantham gum or a tbs or 2 of ground flax to increase protein content.
