I loved the smell
of the yeast, honey, and
whole grain wheat flour from the beginning
of the process to the end
of baking.
For this one, I bumped the overall proportion
of whole grain flour up to about 75 % by using
whole grain flours (equal parts spelt,
wheat, and rye) instead
of white flour in the final feeding
of the starter, and increasing the amount
of whole grain flour in the final dough as well.
I spent several years developing a flour mix that would have some
whole grains and also lend a soft, non-gritty, and light texture that mimicked that
of wheat, and now I'm sharing it with you.

grain.
The topping is made from
whole grains (both
whole wheat flour and oats), the sugar is reduced in both the topping and the filling, and instead
of serving this with ice cream, as you would for dessert, I served it with a dollop
of yogurt and a drizzle
of maple syrup.
Even if you don't want to give up
wheat, experimenting with ancient
grains is delicious and healthful, giving the body a chance to experience a
whole grain and get the benefits from a new range
of vitamins and minerals.

There was no secret that it was

We eat only gluten - free
grains & I can tell a differance, after being on refined,

of you who are curious, I made note
of everything in my freezer: five types
of chili powder; three serrano chile peppers; kaffir lime leaves; white popcorn kernels; cooked chickpeas, mung beans, flageolets, and marrow beans; lots
of Massa brown rice; pasta sheets; unidentified cookie dough # 1; unidentified cookie dough # 2; cooked posole in one bag, red sauce in another (for this); 2 pounds wild huckleberries; 1 sweet

of ginger juice; 2 pounds Straus European - style butter; plenty

of expired acai juice; 8 Parmesan rinds, and roughly five pounds

wheat berries), with the bran, germ and fiber all in there.
The 75 recipes, primarily
of the dessert / baking genre, are sorted by
grain — with chapters devoted to buckwheat,
whole wheat, quinoa, rye, even corn and 7 others.

of permutations to satisfy both — e.g.,
whole grain toast with nut or seed butter, smoothies with some rolled oats or quinoa thrown in to the mix, and scrambled eggs rolled up in a
whole wheat tortilla.
