In addition, traditional populations used older, unmodified strains of wheat and utilized stone -
ground whole wheat berries rather than refined white flour.
Whole wheat berries are used in various culinary applications, such as in salads and in breads to add texture and crunch; but the main application in the bakery though, is for the Italian Easter Wheat Pie
