Here's a healthy zucchini nut muffin recipe made
with whole wheat flour instead of white flour and yogurt in place of part of the oil.
Question - any reason not to just sub whole wheat pastry flour or white
whole wheat flour for all the flour (all - purpose and whole wheat)?
Aside from being able to lessen the added sugar, using white
whole wheat flour in these these muffins increased the fiber content — always a win.
