I did make a batch of these with almond flour, which was too dry and another batch
with wholewheat flour, that was too dense.

I've
used wholewheat flour as a replacement (I used closer to 3/4 cup), but you could use any flour (I'm thinking chickpea flour would be great, but I haven't tried it out yet!).
According to the book, if you want a denser loaf, reduce the white flour and increase

wholewheat flour all that much, except to make brown bread, so am not too sure if you could swap like for like or if a blend would be best... worth experimenting for sure!

I've made «better» pancakes for him before by fermenting
