I have served it with rice or
wide rice noodles (husband can't have gluten).
This dish is equally delicious served with
wide rice noodles (Pad Thai style) and you only need to make one minor adjustment to the instructions.
But this time around, I used Thai Kitchen's «straight cut
wide rice noodles.»
Any wide rice noodle will do; you just have to make sure that you cook them fully, according to the instructions on the package.

Instead of white
rice I used extra
wide egg
noodles.
So I prepared another green version, using Vietnamese, ready - made bánh ướt (you could use previously cooked,
wide, brown
rice noodles for an even healthier dish), leeks and zucchini.

I used thin
rice noodles since my grocery store didn't have the
wider ones, and I only used half the oil I sprinkled some crushed red pepper on top.

Check them frequently: The time will vary from a minute or 2 for thin
rice noodles, to 5 minutes for soba, or up to 12 minutes for
wide brown
rice noodles.
