wild mushroom, saffron, spinach and cayenne — and I thought it would add some more layers of flavor to the
dish.

wild mushroom bundles take a little more time but can be prepared ahead and served as an appetizer or a side
dish.

When I saw «2 1/2 lb
wild mushrooms» on the ingredient list, I thought «NO WAY» —
wild mushrooms are about $ 20 per pound at my local sources, so to follow the recipe exactly would result in a $ 50 +
dish that serves 4 - 6.
Most likely originated from Sicily, where Marsala wine is made, this
dish has a creamy sauce that's got a hint of sweetness from the marsala, a smoky - richness from the bacon, and lots of umami - goodness from the
wild mushrooms.
While I stuck with cremini
mushrooms for today, this
dish is also a fun way to highlight different types of
wild mushrooms.
