Traditionally, most chimichurri's use a white

I didn't have smoked tofu but had a package of firm tofu on hand
so just marinated it for a few hours before hand in liquid smoke, soy sauce, white

so much money on something I barely enjoy (can't use much of the store bought red
wine vinegar as it tastes nasty).
After a few weeks, I got nervous that I was doing it wrong because it didn't smell vinegary
so I added a half cup of raw red
wine vinegar from the health food store to help it along.
I had hummus that I made with a little more Tabasco than I wanted for eating alone
