wine vinegar but I think any lighter
vinegar (like white, apple cider or red
wine) would
work.
As I didn't have any red
wine, I used cider, which
worked very well; I made 2 batches, one with red onions, red
wine vinegar and demerara sugar, and one with white onions, malt
vinegar and white sugar.
White
wine vinegar actually won't
work because it is much more acidic than regular
wine.

vinegar or
