This Sticky Chicken & Vegetable Bowl
with Avocado Mayonnaise is a classic example of one of my «for me only» dishes.
Not exact matches
They're known for their «completos» which are topped
with a guacamole - like paste made
with avocado and
mayonnaise.
Honey ham and tangy cheese is piled high on a slice of thick bread, then garnished
with mayonnaise,
avocado, and fresh tomato.
Remove to serving plates, and top
with a little
mayonnaise, sliced tomato, sliced red onion,
avocado, and grilled red bell pepper.
Peel the
avocados, remove the pits and place them in the work bowl of a food processor along
with the
mayonnaise and jalapeño pepper sauce.
Made
with spinach, black beans, corn salsa (recipe included in link),
avocado, egg,
mayonnaise, chili pepper sauce and lemon juice.
Rather than using egg yolks and
mayonnaise, I have replaced the original ingredients
with a healthier fat (unsaturated fats),
avocado!
These spooky eyed monsters are made

Quite a while ago, I got it into my head to make
mayonnaise with avocado oil and Meyer lemon after my uncle posted about it on his blog — it just sounded so good — and then when I finally got around to making it and discovered that a little bottle of
avocado oil is fifteen dollars -LRB-!!)

Luckily,
avocado oil is not a compulsory ingredient, and you could make this
mayonnaise with any kind of mildly - flavoured vegetable oil.
Unfortunately, this
mayonnaise, made
with avocado oil and Meyer lemons, turned out to be exactly the opposite of that: much much more expensive than any
mayonnaise I would ever buy at the store.
This recipe is not exactly a healthier alternative
with all the
mayonnaise and
avocado in there, but if it's low - fat you're looking for, simply substitute a «light»
mayonnaise for the regular stuff, ditch the
avocado, and you're on your way to the beach.
COMBINE
avocado, cilantro, sour cream, jalapeno,
mayonnaise, garlic and lime juice in the bowl of a food processor; season
with salt and pepper to taste.
