I think the almond meal gave it such a nice flavor but if you are cooking for someone with a nut allergy you could substitute additional oat flour.

Elana's use of blanched almond flour (not to be confused with almond meal, delicious but coarser) intrigues me because Elana uses it as a stand - alone GF flour, instead of flour mixes I often find in GF recipes, which require buying several different flours.
To be honest, I don't know what other flours would work with this - I did just post some 3 ingredient banana bread cookies using almond meal which taste great and are just as easy as this
