I love the nuttiness of buckwheat and I can already imagine how it will go
with the apple flavour combination — Yum!

The
apple juice is pretty important for both the
flavour and the texture of these muffins, so I would really recommend using it although it could be worth experimenting
with a blend of almond milk and maple syrup.
