If you aren't familiar
with garam masala, it's a warm spice blend comprised of cinnamon,
cardamom, cloves, cumin, coriander,
black peppercorn, nutmeg and red chiles.
In a pan boil the Mutton,
with 2 cups of water, cloves of garlic, ginger, salt, onions, cumin,
cardamoms, green chillies, whole
black pepper, cloves and sticks of cinnamon, till the meat is tender.
My favorite blend is souped up
with cardamom and
black pepper.
I do a similar banana cake
with olive oil, chocolate and yogurt, but
with a Swedish twist of
cardamom and
black peppe.
To keep the winter flavors rolling, I've spiced my
black coffee
with deliciously sweet cinnamon, floral
cardamom and delicious allspice (you can add orange zest too, which is just wonderful).
Finishing off
with Shellbark Chevre and beet terrine coupled
with variations of berry preparation and
black walnut tuille, the sumptuous affair was rounded out
with slices of decadent chocolate icebox cake
with red wine juneberry gelee,
cardamom mousse and coca nib cookie.
Typically, a Sri Lankan
black curry is made as follows: coriander, cumin, fennel, and fenugreek seeds are roasted separately, then combined
with whole cinnamon, cloves,
cardamom seeds, and leaves from the curry tree.
Dry - roast the cumin, mustard, turmeric,
black peppercorns, cinnamon,
cardamom, clove powder, and nutmeg powder in a skillet for about a minute, and then place them into a food processor or blender
with the onion, garlic, ginger, red chiles in vinegar, 1/8 cup oil, 3/4 cup vinegar, sugar, and salt, and puree to a smooth paste.
Head distiller, Alex Davies and his team then add their unique botanical mix of Cotswolds lavender and bay leaf, grapefruit, lime,
black pepper and
cardamom seed into their carter head still for distillation, before finishing
with naturally refined Cotswolds water.
The salad combines
black - eyed peas and carrot coins
with a fragrant Persian spice blend of rose petals,
cardamom, coriander, cinnamon, and
black pepper.
Now in a large wok, heat the remaining oil (or ghee) and temper it
with whole spices — cinnamon, cloves, green and
black cardamoms and bay leaf.
Boil the milk
with turmeric powder, salt,
black paper, cinnamon, mace,
cardamom, green chili, fennel powder and cauliflower pieces for 5 minute.
Dice the remaining half of your onion and add it to the skillet, along
with the serrano pepper, 1 tablespoon of garam masala, cumin, turmeric,

cardamom and cloves (you can add a dash more oil if it seems to dry), and sauté until onion is soft, about 5 minutes.
It is only appropriate when fall hits to go from green to chai tea because something just makes sense about the blend of cinnamon,
cardamom, ginger, nutmeg and cloves
with the kicky addition of
black pepper.
Risotto
with black squid ink was delicate — I was curious how Sandrino had managed to make such a light dish and he explained that it was cooked in a white stock made
with fennel, white onion, celery,
cardamom and bay beaten
with mascarpone chopped squid and
black squid ink then dressed in a ricotta, mascarpone, Parmigiano and pecorino cream and garnished
with pan-fried squid and raw Ebi prawn.
Add the chicken pieces
with the curd - onion -
black pepper mixture along
with bay leaf, cinnamon,
cardamom, cloves and marinade for an hour.
I had a most excellent affogato made
with cardamom -
black pepper gelato.
