Living in Germany at the moment and kale isn't in the supermarkets yet but substituted it
with some delicious pointed cabbage instead, and you can't get
black beans anywhere here, but mixed white beans,
kidney beans, chickpeas worked a treat.
I would also recommend mixing in red
kidney beans / haricots / or
black beans (canned or boiled)
with walnuts 50:50 ratio.
Super versatile and can be made
with black, white,
kidney beans, or even chickpeas!
Anyway, I'll be trying this recipe
with black beans and also
kidney beans as well (and maybe tweak the seasonings a bit).
I make a similar meatless chili in a crockpot (I make a LOT at once and freeze for a quick lunch or dinner for 1 or 2)- and I think you'll like this idea: along
with carrots, celery, onions and garlic, I usually use 3 - 4 cans of (low sodium, rinsed) beans (2
kidney, 1 each of another; I like
black and small white or pink beans), 3 - 4 red / yellow / orange sweet peppers (I but at the farmer's market when fresh and cut up and freeze the extras for making chili in the fall / winter); 1 or 2 zucchini and / or yellow squash, and (drum roll) 1 can of organic PUMPKIN PUREE!

Since my main meals are usually eaten away from home (I work in an ER), I like making big pots of things that last several days, and lately that's been sweet potato chipotle chili (
with black and
kidney beans and tons of veggies).
You can use
black,
kidney, or pinto beans, or chickpeas all
with good results.

with shredded chicken, red bell peppers, chopped avocados and sour cream ~» Veggie wraps» — saute an onion and two colors of bell peppers in a bit of EVOO, a can of stewed tomatoes
with juice (smooshed up), a can each of drained / rinsed
black beans and
kidney beans, and ultra generous amounts of chili powder and garlic.
Stir through the
kidney beans and the chopped spinach then season to taste

I actually took out the chicken since I was cooking for some vegetarians, put in some
