I love the flavour of honey
with strawberries and rhubarb, so I used a little bit of strong
buckwheat honey
in the crisp topping and a milder honey to sweeten the fruit part.
Buckwheat works magically there
in place of rice
with its lovely toothsome texture and nutty flavour.
In their whole form the
buckwheat is so crunchy and the mild flavor goes well
with almost anything.
I've used chestnut flour back when we lived
in the U.S., and really liked working
with it — a medium weight flour, not too hygroscopic, a light flavor, not grainy at all — I think I'd put it between
buckwheat and sorghum as far as texture.
