I'm not sure what other gluten free flours you have on hand — but, substituting
with buckwheat only will not work unfortunately.

with oat flour instead of
buckwheat, coconut nectar instead of maple syrup and white sweet potatoes instead of orange ones (
only ones available where I was in South Africa) and they turned out DELICIOUS.

with a delicious stack of pancakes in less then 30 minutes.
I work
with an immune compromised man who has learned that the
only grains he can use are tef and
buckwheat.
My first attempt was
with buckwheat and oat
only, but the outcome was a bit too bread like.
They're packed
with wholesome oats, coconut and
buckwheat flour, and contain no dairy, eggs or nuts, so you can even send these ones off to play centre (
only if you have kids though — might be weird otherwise).
We create our bread and pizza using
only tapioca starch and
buckwheat, combining these
with other all natural ingredients.

First I made these
only with gluten - free oat and
buckwheat flour, then added some rolled oats, and now I've settled to a mix of oat,
buckwheat, and brown rice flour.
The
only change I make is that I substitute quinoa for the
buckwheat, and finish it off
with a generous sprinkle of Mrs. Dash Original Salt - Free Seasoning.
You could easily make this dish gluten - free: Rice or
buckwheat noodles will taste just as delicious: that's what I use, and not
only because I like to limit my gluten intake, but because I love to explore
with the whole gamut of grains.
Buckwheat is good in smoothies or pancakes, and gluten - free bread is always good for slapping a sandwich together when you have
only a few minutes before you need to leave the house (or if you need to hurry up and pack something to take
with you).
Note that sprouting
only really works well
with high phytase grains and seeds such as
buckwheat, rye and wheat including einkorn.
In Russia where I'm from
buckwheat is eaten
only with hull.
