This salad is great to make in different ways, for instance I've made it with chopped dates instead of cherries,
with butternut squash instead of Kabocha, and also without eggplant.

butternut squash at my supermarket so I used sweet potatoes
instead (and omitted the regular potatoes) and added about a half cup of dried apricots along
with the tomatoes to give it a bit of a sweet pop!
