Have you ever heard of the quick soft serve ice cream technique, where you freeze
coconut milk in ice cube trays and then blend the cubes
with fruit, sweetener, etc. into into a perfectly spoonable frozen treat?
In a blender, combine the
coconut milk with 2 tablespoons maple syrup.
Place the cooked carrots and garlic
in a blender
with the lentils and the fried herbs, then add the
coconut milk and water and blend until smooth and creamy.
Drain the water from the potatoes and place them
in a large pan
with the
coconut milk, tinned tomatoes, carrots, turmeric, cumin, chilli, salt and pepper.
We used almonds
in the absence of walnuts (soaked
with salt,
in true Nourishing Traditions style), and topped
with coconut milk, shredded
coconut, pomegranate, pineapple & banana.
