I had not eaten galumpkis in many years, but was inspired to
cook up a batch recently when I bought a large head of
cabbage at the farmer's market along
with some grass - fed organic ground beef.
I tried a
cabbage gratin
with juniper berries that Deborah Madison presented in VEgetarian
Cooking for Everyone... it was the same way, very lightly coated
with minimal cheese, but amazing!

cooked rice, quinoa or other grain; thinly sliced red
cabbage, carrots, bean sprouts, cilantro for garnish.
My favorite stew right now is one made
with diced pork shoulder
cooked in coconut oil,
with lots of fresh ginger,

I find the purple
cabbage harder to
cook with than
with regular garden variety
cabbage as it leeches its color into everything.

My favorite stir fry is very thin slices of beef or duck, red curry sauce, garlic, ginger,
cabbage, snow peas, small hot red peppers, salt and pepper
