Pesto is crazy versatile and I usually have a batch of some variation in the fridge - I use it as salad dressing, toss it with roasted veggies, mix
it with cooked grains, drizzle on avocado toast, and throw it on top of my hummus (a must - try).
Toss shredded chicken
with cooked grains (such as farro, rice, or barley), chopped fresh tender herbs, finely chopped shallot, chopped toasted pistachios, and your favorite vinaigrette.
Divide salad greens between two plates, and top evenly
with cooked grains, raspberries, feta and onion.
The relish is mighty tasty as a side dish as well, and we often serve this sauce
with cooked grains like quinoa or barley.
Put leftover roasted vegetables mixed with some tinned beans and pesto into a wrap or pitta, or mix
with cooked grains.
YES, you can make
them with another cooked grain.
On Tuesday they could be part of your packed lunch
with some cooked grain and some sort of sauce.

Serve the stew hot
with a few green olives per portion, lemon wedges and warm
cooked grain.
Fresh juices (I'm a convert), Brussel sprouts and rapini are upstaging kale (baby or otherwise),
cooked grain salads, Ramen (it's a second go - round), globally - inspired sandwiches (like Cuban pressed sandwiches) brunch as well as grilled cheese sandwiches, and customized food (even McDonald's is trying to be accommodating), drip coffee (move over Latte, Espresso and Café au Lait) along
with fancy copper drip coffee filter holders (check out Hario Coffee or Kalita).
I soak my
grains, nuts, and seeds overnight in acidulated water, give them a good rinse the next morning, then
cook them
with apples, cinnamon, cardamom, and vanilla.

While I realise that for some, gluten really does affect their system, for the majority of people, I believe it's actually a life
with fewer refined
grains and heavy
cooked processed foods that is actually helping them feel great.
Wild rice is one of my favorite
grains, but I hardly ever
cook with it.
