You can roll these in pretty much any crushed up toppings, but for the holidays I kept it
festive with crushed pistachios, coconut chips, and freeze - dried raspberries.
Eventually, I would get my hands on a popsicle or, even better, saffron - cardamom ice cream
dusted with crushed pistachios sandwiched between two wafer cookies.
If you do serve it as a pudding, sprinkle
with crushed pistachios and fresh raspberries.
Optional: Sprinkle
with crushed pistachios and goji berries for a festive red and green holiday treat.
I also decided to top
them with some crushed pistachios, goji berries and desiccated coconut for that extra festive look.
Any left over dough we had was transformed into cookies which were brushed with some eggwhites and topped
with crushed pistachios or cinnamon sugar.
Drizzle a little bit over each ball and sprinkle
with crushed pistachios.
Spoon into silicone moulds, and top
with crushed pistachios.
