Hearty Zucchini Soup is filled
with diced potato and zucchini with punches of garlic and curry flavor, making this veggie soup filling and satifying.
Make
it with diced potato, sweet pickles, celery, chopped egg, and a good amount of mayonnaise.
I tried it slightly altered — cooked the carrots with the onion and celery, along
with diced potato, and with no Italian seasoning I improvised and used 1/8 tsp of each dried basil, oregano, thyme, rosemary (that was fresh), and red pepper flakes.
I hope your husband likes it better
with the diced potatoes!

Put apple mixture in foil pouch (see
potatoes directions above), dot
with diced butter, seal tightly and grill until apples are tender, about 15 to 20 minutes.
You could add some
diced potato but I didn't think it really needed it after testing the recipe
with and without it.
Dice potatoes and carrots and place in large skillet
with olive oil.
Add the
diced sweet
potatoes to a large pot and cover
with water.

Lentils are a go - to for me... I love simple curried lentil soup (veg broth,
diced onion, mushroom, curry powder, cumin, garlic, and lentils + any add - ins you like... squash or
potatoes help add bulk to it, I like adding spinach or kale, tomatoes add a nice acidity...) or an even simpler cold lentil salad made
with red onion,
diced tomatoes, lentils, chickpeas, and lemon juice / vinegar / EVOO.
But the biggest addin was to make the orka go a little further (everyone wanted some and more) was to
dice a few
potatoes into about the same size cubes, toss in while coating
with the cornmeal.
Place the peeled and
diced potatoes into a pot, cover
with cold water and bring to a boil.
Add the
diced butternut squash and sweet
potato to a large pot and fill
with water, covering by about 2 inches.

with roasted sweet

diced it and boiled them

There are so many other options that you could choose from: fresh tomatoes, pineapple pieces, olives, sundried tomatoes, cooked beans — whole kidney and cannellini beans work well; ditto any kind of refried beans — mushroom slices, chopped asparagus, garlic cloves, corn kernels, capers,
diced avocado, zucchini sticks, thinly sliced roasted
potato with fresh rosemary, cashews.
All you have to do is cook the
potatoes & tofu scramble, add to the jar, and top
with salsa and
diced avocado!

For your
potatoes,
dice them relatively small, and add to a skillet

On a sheet pan lined

diced potatoes with 2 tsps olive oil, chili powder, and a pinch of sea salt.
I use it all the time in my salads (peel
with a
potato peeler then
dice or slice) and daikon is ALWAYS never hot, but subtle flavored and very crunchy (well, if you choose the firmest or hardest daikon you can find — and never buy soft or flabby diakon, though the taste is OK, it's such a shame to not have that wonderful crunch in a salad)!
