I replaced the
banana with a couple of dates — as I only had
dried ones I let 5 - 6 soak in water for a bit.

I make muffins
with the leftover pulp (reference this pumpkin muffin recipe, swap in overripe
bananas for the pumpkin and use a
dry sweetener instead of the maple to compensate for the wet pulp).

Made it first time
with fresh blueberries / blackberries / raspberries /
bananas and came out delicious but a bit
dry (used maple syrup).
I think these tasted good, i used more than a few tablespoons for each one and i did notice the middle to feel
dry or that uncooked kinda feeling and i wonder did i not mix well enough, other than that i warmed
banana on a pan and put them on
with ground flax and it was really food.
These muffins also have much lower glycemic load than my regular muffin recipes that use

with a variety of unexpected toppings including any type of fresh or
