The essence of this soup is the chickpea broth, so I really encourage you to start
with dried chickpeas and make the broth from scratch.
I use canned chickpeas and frozen or tinned sweet corn because they're easiest, but I'm sure it would be tasty

The Power of Pulses: Saving the World

Chickpeas, Favas & Lentils, by seedsman Dan Jason and cookbook authors Hilary Malone and Alison Malone Eathorne (Douglas & McIntyre, 2016) has good - looking photos of the legumes as they grow and colourful shots of the
dried versions too.
In a large bowl mix the cucumber, onion, sun
dried tomatoes, parsley, and
chickpeas,
with the remaining salad dressing.
When I'm flying
with my kid I usually pack: a baggy of Canaan's current favorite cereal (either Rice Chex or now it's pumpkin Joe's O's), LaraBars, Rx Bars, or Perfect Bars,
dried coconut strips, apple slices, celery or carrots, homemade Easy Protein Energy Bites, a banana and Justin's vanilla almond butter packets and sometimes a small container of rinsed
chickpeas.
Meanwhile quinoa is cooking cut mango, sun -
dried tomatoes, scallions, basil and spinach into smaller pieces and add to a big bowl
with drained
chickpeas.
It is filled
with chopped lettuce, cucumber, and red onion, sun
dried tomatoes,
chickpeas instead of the hummus sometimes served on sabich, roasted slices of eggplant, hard boiled eggs, and arguably the best part - spiced and toasted strips of pita.
I tested this recipe
with both canned garbanzo beans (
chickpeas) and
dried that I soaked for a good 17 hours.
These crispy twice baked potatoes are filled
with a flavourful
chickpea, caper, onion and sun -
dried tomato mash, then topped
with a creamy tahini sauce and fresh chives.
To make
chickpeas in the slow cooker, add about 2 cups of
dried and rinsed beans to the slow cooker
with enough water to cover them about 4 inches high.
If the
chickpeas are
dry, toss them
with just enough oil to lightly coat.
A little tired of
chickpeas by now, I am a fan of making something similar
with dried peeled Favas — which, btw, can only be found at Berkeley Bowl.
Dried chickpeas, a staple starch in the Mediterranean, traveled
with the Jews when they emigrated.
Transfer
chickpeas to a bowl and lightly dab
with a paper towel until mostly
dry.
I've used this recipe many times,
with canned
chickpeas and
dried, plain and
with sun -
dried tomatoes or olives mixed in, for myself and for others.
So: Soak
dried chickpeas overnight
with 1 tsp baking soda; drain, rinse and add more baking soda and more cold water.
Both mung beans and lentils fall under the nutritious category of pulses, together
with all other beans,
chickpeas and
dried peas, which might just be the most affordable superfoods out there.
Lentils also do a great job of making the soup more filling and satisfying, since they fall into the category of pulses (together
with chickpeas, beans and
dry peas), which are protein and fiber - packed little superfoods.
Drain and thoroughly rinse the
chickpeas and blot
dry with a paper towel.
Pasta combined
with greens and beans is a classic combo, and this one featuring spinach and
chickpeas, embellished
with sun -
dried tomatoes, is a tasty take on this trio.

drying a softening blast of grated and turmeric - coated cauliflower in a hottish oven,
with preserved lemon and lots of shaved veggies stirred in.
You can make tasty falafel
with canned
chickpeas but if you want more flavour and texture I recommend to use
dried chickpeas.
We're well into the International Year of Pulses now, and I just LOVE coming up
with new ways to incorporate more pulses (aka
chickpeas, lentils,
dry peas and beans) into my diet.

We enjoyed a tasty vegetable soup and a plate of their salads including potato salad
with chickpeas, houmous and a sweet cabbage mixture

Of course if you didn't have the foresight to soak your beans overnight you can also make this
chickpea avocado salad
with canned
chickpeas — a bit more expensive than
dried but still a cheap ingredient.

chickpeas, and then
dry them out in a low oven, until they're just
dry, but not rock hard, and then wizz them in the food processor.
