In my chili recipe, I make a paste
with dried chili powders that I bought, mix with water, and add to the chili for the bulk of the seasoning.
Cook for another 5 minutes, stirring occasionally, and season
with dried chili flakes, salt and pepper.
Carlota, if you have liquid smoke, smoked paprika or smoked salt, you could try those combined
with some dried chili powder.
I know for sure you can make hot sauce
with dried chili's but not fermented hot sauce.
I happened to have a larder filled
with dried chilis, so I picked a variety of mild / mediums: New Mexico, guajillo, cascabel, chipotles, ancho.

The ones that survive the trip home (many get consumed in the car) get turned into salad nicoise or get flash
dry fried

Scramble some extra firm tofu in a pan
with a bunch of
chili powder and your other favorite taco seasonings in a large pan (add water to the mix if it gets too
dry)
To
dry - roast bell peppers and
chili peppers, preheat the oven to 450 degrees Fahrenheit, and line a baking sheet
with parchment paper or a Silpat.
Ancho chile powder is made up purely of
dried and ground ancho chiles (as opposed to standard «
chili powder,» which is actually a mix of ground chiles
with several spices like oregano, garlic powder, and cumin.
Season the meat
with tomato paste, ground cumin, sea salt, black pepper,
chili powder, and
dried oregano and then stir to mix well.

dried New Mexican chiles.

You can substitute it
with ground cayenne, paprika,
