Sorry this thing is giving me a hard time from my phone... I used whole
wheat flour because I was out of regular all purpose... I usually can't taste a big difference except things are occasionally
drier but these weren't because all the pumpkin... But I replaced the ginger
with turmeric, the allspice
with cardamom (in the amounts called for) and omitted the cloves entirely and they were so delicious!!!
Another fantastic recipe for kale for non-vegetarians (we cook both ways in our house) is from Deborah Krasner's The Flavors of Olive Oil cookbook: «Whole

Turns out, the bag
with «ground
wheat and flax» was actually Italian
dry breadcrumbs!

However, the difference it has from normal bread is that instead of being made
with wheat flour, it is usually made
with tapioca flour (also known as «cassava»),
with the inside being typically chewy and moist, unlike the common bread's
drier inside texture.
In 2005, Peggy soaked some
wheat grains in a Mason jar filled
with water,
dried them, ground them
with a small home mill, and made her first loaf of sprouted flour bread.

The whole
wheat flour I get in the States is often hit - or - miss for substituting - I often end up
with baked treats that are a bit on the
dry side.
Glad you liked the taste but shame it turned out
dry and rubbery, it's hard to say why, to be honest I don't work
with vital
wheat gluten often at all as I can't buy it here (online only) so it's hard for me to troubleshoot as I don't have a lot of experience working
with it: — RRB - The proportions of liquid should be just right in the recipe so maybe too much vital
wheat gluten got added during the kneading stage?
This loaf is by no means as easy as
wheat bread — it involves multiple ingredients (as opposed to the 6 in my whole
wheat loaves)-- but at least I didn't have to bother
with premixing the wet and
dry portions or any of that crap.
